The Tree Room Manager is expected to lead a four or five star professional service team and organization by providing exceptional products, training, and service for Sundance guests. Lead a service team to create a memorable experience for the guest by exhibiting remarkable personal skills and providing exceptional service in a casual and professional environment. Provide up to date training and use positive leadership skills to lead and motivate staff, creating a casual yet professional, service oriented environment. Oversee and direct all aspects of the Tree Room dining room. | | Duties: | ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Ensure proper sequence of service for dining guests.
Ensure that the restaurant is clean and organized at all times
Oversee and assist in the set-up, confirmation and organization of restaurant reservations.
Create data-bases including accurate and current customer profiles.
Possess exceptional understanding of fine dining service standards.
Exhibit exceptional job and product knowledge to provide staff and guests with accurate information in all aspects of food, wine, service, and resort information.
Exhibit self-confidence and possess a high level of personal skills in order to handle a variety of situations in the moment while staying positive and professional.
Establish a leadership role.
Work closely with F&B management on menu, food concepts, wine lists, and guest feedback.
Manage all functions of operation, menu changes, scheduling and setting reservations.
Provide training for all staff, assist in hiring of staff.
Provide a learning environment by way of daily training to create and maintain a professional team.
Order supplies, complete inventories, and ensure restaurant supplies are at an adequate level.
Ensure that all the necessary equipment is in place and in working order.
Interact with the executive chef and sous chef, working closely with both to create a team environment.
Oversee staff to ensure a smooth running operation.
Interact warmly with guests on a daily basis personally greeting 80% of the Tree Room patrons.
Oversee all other operations that will affect the restaurant.
Confirm reservations and assure smooth flow of dining area.
Quality control/guest satisfaction-exceed guests’ expectations.
Assist the captains, servers, bartenders, runners and bussers when needed on busier nights.
Turn in correct beginning and end-of-shift check outs and reports.
Plan and direct work load for every shift.
Must exhibit high personal cleanliness.
Knowledge and compliance of Utah liquor laws.
Takes ownership and is responsible for all aspects of the Tree Room Restaurant operations.

SUPERVISORY RESPONSIBILITIES
Directly supervises 12-16 employees in the Tree Room. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
Complete all applicable paperwork for the above responsibilities and submit to HR in a timely manner.
ENVIRONMENTAL COMMITMENT
Support and participate in environmental programs associated with position: minimizing waste, recycling, energy conservation, purchase and use of sustainable products, education on environmental ethic, support vendors with similar ethic, decrease pollution levels, minimize the use of toxic chemicals, restore wild life habitats.
DRESS CODE
Sundance recognizes the impact that our image has on the guest’s impression of the resort and the perception of our ability to provide professional service to our clientele. In order to best promote a positive, professional image that meets Sundance guest’s expectations, employees are required to dress in a professional, conservative fashion that is appropriate for their area. Please use the following as a minimum standard:
All aspects of the Personal Appearance policy (SPL#50) must be in compliance.
Staff is required to wear nametags at all times while on duty.
Clothing must be unwrinkled and clean, and in good condition (no rips, tears, or frays regardless of whether accidental or fashionably placed).
Blue jeans are permitted if no standard uniform is required.
Men’s shirts must be tucked in.
Appropriate skirt length is from the knee to the ankle- if no standard uniform is required.
A tailored fit is required of all clothing
Tank tops, halter tops, tube tops, and spaghetti straps are prohibited.
Sleeveless shirts are not permitted for females.
Bare midriffs are prohibited.
Proper footwear for your department is required.
Dress sandals are permitted for females.
Flip flops are prohibited in all areas.
Tennis shoes are prohibited unless there is a business need (ie: Mtn Ops)
No large jewelry.
Hair must be clean and combed. Long hair must be worn off the face
Clean shaven or trimmed beard for men, no stubble
Pants/shirts must be free of stains, frays or holes
Pants/shirts must be clean and pressed
Employees must be showered with clean teeth, fresh breath, clean hands and nails
Tree Room server standard uniform is… khaki pants, black small buckled belt, black dress shoes, black socks, Tree Room shirt, white under shirt, and black apron.
Failure to comply with the dress code policy or enforce dress code and personal appearance policies with their staff, may result in disciplinary action up to and including termination.

EDUCATION and/or EXPERIENCE
Bachelor’s degree (B.A.) From four year college or university; or one to two years related experience and/or training; or equivalent combination of education and experience. Two to four years food service management experience in a full service restaurant. Expert knowledge of wine, liquors and beer. Prior experience with basic accounting and budgeting.
TECHNICAL/COMPUTER SKILLS
Knowledge of word processing, spreadsheets, internet navigation, electronic mail, Mircros, Quattro Pro, etc.
CERTIFICATIONS, LICENSES, REGISTRATIONS
Must have or obtain current food handlers permit in accordance with State and Federal law within 30 days of employment.
Must have or obtain a current alcohol service permit in accordance with State and Federal law within 30 days of employment.
Must possess a valid U.S. Drivers’ License in good standing as determined by Sundance’s Insurance Company guidelines.
LANGUAGE SKILLS
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals, Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees or organization.
MATHEMATICAL SKILLS
Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
REASONING ABILITY
Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
